How to Choose your Wedding Cake Flavours

My signature approach is to create custom luxury wedding cakes that not only look exquisite but also offer a luxury taste, enhanced by the unique touch of being handmade. I have invested considerable effort into developing our flavour menu and believe that flavours serve as the essence and foundation of your bespoke wedding cake.

Thankfully wedding cake flavours have evolved beyond the classic (and often extremely dense) fruit cake stored away for years - modern couples embrace adventure and have fun with their flavour choices! It’s now completely acceptable (and even recommended) to have distinct flavours for each tier, which is ideal for satisfying different preferences or simply adding a fun twist to your cake. Combining exceptional taste with stunning design ensures that your wedding cake stands out as a memorable highlight of the day, rather than being an afterthought.

Your wedding cake should be the best cake you ever eat. So, here is a little guide on how to choose your wedding cake flavours…

What is on the inside?

Each cake consists of three hand-baked layers of fluffy sponge and two layers of delicious fillings. Semi-naked cakes have a layer of buttercream around the outer sponge, while buttercream and fondant cakes are covered in a luxurious white chocolate ganache and in the case of fondant cakes, a fine layer of premium Swiss fondant.

 Where do we start with choosing flavours?

Typically, my couples choose a widely loved flavour alongside one or two of their personal favourites. The most sought-after crowd-pleaser flavours include:

  • Lemon & Elderflower

  • White Chocolate & Raspberry

  • Passion Fruit & Blueberry

  • Dark Chocolate Truffle

When it comes to choosing their personal favourites, according to my couples, the best wedding cake flavours are

  • Toffee & Salted Caramel

  • Carrot Cake & Orange Blossom

  • Chocolate Espresso

  • Raspberry & Rose

If you’re having trouble narrowing down your selections, I recommend considering the season of your wedding. We often connect seasons with specific flavours and emotions. For example, Winter and Autumn evoke deep, warming feelings, so consider a cinnamon, walnut and raisin-infused carrot cake layered with orange blossom buttercream or, alternatively, a rich chocolate mud cake layered with creamy espresso buttercream. In contrast, Spring and Summer suggest light, fresh, and fruity sensations, so consider zesty lemon & elderflower or passion fruit & blueberry.

Also consider what other food you will be serving on the day. For example, if you are serving a chocolate dessert with your wedding breakfast, you may not want to follow this with a chocolate wedding cake.

Can the flavour you pick help to tell your story as a couple?

Was your first date on the London Eye? Consider our classic vanilla victoria sponge - vanilla Genoese sponge, layered with whipped vanilla buttercream and handmade strawberry conserve. Did you get engaged in New York? Consider dark chocolate truffle or chocolate espresso. Are you planning your honeymoon in Italy? Consider white chocolate and raspberry - vanilla Genoese sponge, layered with raspberry conserve and white chocolate buttercream. Swop white chocolate buttercream for cream cheese frosting for that extra Italian twist!
